Baked citrus salmon

This is such a lovely and fresh way to serve fish and paired with a delicious salad like this, it will certainly tickle those taste buds! Being so easy to put together it will take you no time at all to make it a great addition to your weekly menu.



Full of healthy fats, vitamins and minerals!!

Ingredients:


4 salmon fillets skin on (I often buy tails as they have no bones and have more fat on them)

2 oranges sliced into rounds

Season with salt and pepper


Salad:

2 large juicy oranges cut into even bit size wedges

2 small red grapefruit cut into even bit size wedges

1 large fennel bulb thinly sliced using a mandolin

1 small red onion thinly sliced using a mandolin

200 g haloumi grated

1 Tablespoon hulled hemp seeds


Method:


1. Place salmon skin side down on a lined baking tray. Place orange slices on top and season.

2. Bake in a hot oven 200° for approximately 10 minutes or till cooked to your liking.

3. While salmon is cooking, assemble salad ingredients in a medium bowl. Toss well to combine, if you need more juice you can add extra.

4. Remove salmon from oven and serve alongside the salad.
