Blueberry and green shoots salad


The blueberries have been so big and sweet this year and make a delicious little addition to this refreshing salad of greens. Fruit doesn't often make its way into salads, yet there is no reason why you can't experiment and add some in for extra flavour, nutrition and sweetness!!



Little blue bursts of goodness!

Ingredients: serves 4 - 6


2 punnets of blueberries

300g baby leafy greens

200g snow pea or broccoli sprouts

1/4 red cabbage finely sliced

1/4 cup sunflower seeds

1/4 cup pepitas

1 large red onion

1/3 cup apple cider vinegar

Pinch of salt


Method:


1. Finely slice the red onion and put in a jar with the apple cider vinegar and salt. Leave to macerate, soften and sweeten. The longer it sits the more mild the onion flavour.

2. In a salad bowl or platter dish, arrange salad leaves, sprouts and cabbage.

3. Sprinkle over seeds an blueberries.

4. Toss through the onion/dressing mixture just before serving.
