Festive holiday (or anytime 😉) avocado 🥑 mousse

Now is the time we all encounter dips and appetisers at their greatest! This dip runs with the festive theme colours ❤💚❤️ and tastes absolutely delicious!! Creamy avocado 🥑 zesty lime 💚 and beetroot hummus goes so well together and packs a nutrient dense punch 🥊



INGREDIENTS:


Avocado mousse

Flesh of 3 medium sized ripe avocado Zest of 2 juicy limes

2 cloves garlic peeled

4 Heaped tablespoons collagen powder (I use Gelpro Peptipro)

2/3 cup thickened cream

Tabasco to taste

Salt and pepper to taste


Beetroot hummus This makes another complete dip but use a small amount to spread over avocado mousse

or create layers

2 medium cooked beetroot peeled and halved

2 cloves garlic

1 can cannellini beans drained

Salt and pepper to taste

1/4 teaspoon ground cumin

1 Tablespoon tahini

Extra virgin olive oil as required to thin mixture

Juice of 1 large lemon



Method:


1. In a NutriBullet or food processor blend all avocado mousse ingredients until smooth.

2. Lightly oil a mould or mini baking dish/ramekin. Line with baking paper for ease of removal. 3. Pour avocado mixture into dish and tap on bench to remove air pockets.

4. Put in the fridge to set for at least 4 hours or overnight. 5. Meanwhile, process beetroot hummus ingredients till smooth and creamy. Spoon a layer onto avocado mousse before serving. 6. Serve with vegetable, crackers, seafood, on crisp breads, or even on toast!
