With winter ❄️ just around the corner, now is the time to get that soup pot out and get creative with seasonal and highly nutritious ingredients to give your body a healthy and enriching boost.
1 Tablespoon grass fed/organic ghee (clarified butter)
2 medium onions peeled and chopped
1 leek washed, halved and sliced
3 cloves of good quality fresh garlic chopped
2 sticks of celery washed and chopped (leaf as well)
3 medium carrots washed and chopped
1 medium sweet potato washed and chopped into roughly 2 cm cubes
3 small potatoes washed and chopped into cubes
700ml - 1Litre of homemade or good quality organic chicken or vegetable broth/stock
2 sprigs of fresh or 1 teaspoon dried thyme leaves
1 teaspoon dried tarragon
1 teaspoon freshly chopped or dried oregano
1-2 teaspoons freshly grated turmeric or good quality powder turmeric
1 1/2 cup fresh or frozen peas
1. Heat ghee in a large soup pot. 2. Add in onion, leek, garlic, celery and carrot, sauté gently. 3. Add in both potato varieties before pouring in the stock. Bring to boil and simmer for 5 minutes. 4. Stir in the herbs and turmeric. 5. Simmer on low till potatoes are tender. 6. Scatter in the peas and stir through. 7. Serve for a wonderfully warming meal.
Note: You can adjust the stock liquid content depending on whether you like a thicker or more watery soup.
