A deliciously creamy, naturally sweetened and healthier version of ice cream that‘s perfect for hot days or with wintery apple pie!
750 ml natural Greek yoghurt
250 ml pure cream
250 g fresh blueberries
1 Tablespoon raw honey
*If doing plain vanilla, whip in beans from 3 vanilla pods or 2 Tablespoons vanilla paste.
1. In a small pot heat 2 punnets of fresh blueberries with honey till slightly softened and juicy.
2. Whip the pure cream till quite stiff and fluffy. 3. Gently on low, whip in the Greek yoghurt, sweeten with raw honey to your liking (remember the blueberries are sweet and have a bit of honey as well)
4. Once mixture is whipped, stir through the blueberry mix, pour into container and freeze.
5. Let thaw slightly before serving.
