Mercer Mudcake

This recipe (which also happens to be gluten free) came about because my husband loves mud cake, it's his favourite and always requested for a celebration such as Father's Day/birthday. It's a lovely dense cake yet still light enough to thoroughly enjoy a small slice (or a large one in my husbands case) as a special treat!

Deliciously gooey and chocolatey!


3/4 cup extra virgin olive oil

200 g dark chocolate (at least 85%)

1/4 cup water

1/4 cup espresso coffee

1/3 cup cacao powder

2 teaspoons vanilla extract

1 cup pitted and chopped dates

3 free range eggs

3/4 cup sifted buckwheat flour

1 teaspoon baking powder (use gluten free baking powder if wanting the whole cake to be gluten free)


2/3 cup pure cream

200 g dark chocolate (at least 85%)


1. Preheat oven 180°, grease a 20 cm cake tin

2. In a small saucepan, combine dates and 3 Tablespoons hot water, over low heat, gently break down the dates to a paste using the back of a spoon or even a nutri-bullet/processor.

3. In another saucepan, gently heat oil, chocolate, water and coffee, stirring constantly till smooth. Add cacao and vanilla.

4. Transfer chocolate mix to a mixing bowl, add date mix and eggs, combine quickly and well to avoid eggs scrambling.

5. Sift in flour and baking powder, mix through well.

6. Pour into tin and bake for 55-60 minutes or until skewer/knife comes out clean.

7. Let cool in tin before turning out and icing.

8. Meanwhile in one of the same saucepans used, gently heat cream and melt chocolate, stirring till combined.

9. Once cake is turned out and cooled, pour ganache over the cake and decorate how you would like.

NB; For the strawberry powder, I simply dehydrated fresh strawberries and processed to a powder once dry.
