Delicious flaky pastry encasing red salmon, ricotta and herbs. 🌿
Wonderful with a side salad 🥗 or steamed vegetables, in a picnic 🧺 basket or school lunchbox!!
1 x 400g tin red salmon drained and flaked
500g full fat ricotta drained
2 Tablespoons of baby capers
2 large shallots chopped
3 good sized sprigs of fresh dill chopped roughly
Salt and pepper to season
Zest of 1 large washed lemon
6 sheets all butter puff pastry
1. Preheat oven to 180 degrees, meanwhile in a large mixing bowl, combine all filling ingredients well. 2. Cut pastry sheets into quarters. 3. Place 2 decent sized Tablespoons of filling mix onto the middle of each pastry quarter. Fold pastry over filling and tuck in ends. Place onto a baking tray. Repeat with remaining mixture and pastry. 4. Once all rolls are on the tray, lightly beat the egg and using a pastry brush, brush beaten egg over pastry to give a golden coating while baking. 5. Bake in oven for 15 minutes or until golden and flaky. 6. Serve with your choice of vegetables or salad.
