Vegetarian 🌱 wreath

Here’s a great way to serve up a variety of vegetables and you can really use any ones you like or have available!

This is a great meal that takes no time at all to make and will boost your daily veggie intake as well 💚

Ring a ring a vegetable!!

Ingredients:

1 large leek washed and roughly chopped

3 shallots roughly chopped

3 medium carrots grated

1 large bunch of fresh parsley roughly chopped

1 small bunch of fresh dill roughly chopped

1/2 cup plain flour

1 teaspoon baking powder

4 large eggs (I use duck eggs)

1 cup grated cheese

1/3 cup extra virgin olive oil

1 Tablespoon extra olive oil to grease Bundt tin


Method:

1. Preheat oven 180 degrees and lightly oil a Bundt tin.

2. In a large mixing bowl, combine all vegetables and herbs, mix well. 3. Sprinkle over the flour and baking powder. Combine well with vegetable. 4. In a small bowl, lightly beat eggs and add to vegetable mix with cheese and olive oil. Stir mixture well. 5. Pour mixture into Bundt tin and smooth surface evenly. 6. Cook in oven for 30 minutes. Once cooked, gently tap the tin on bench to loosen and leave to cool for several minutes before turning out. 7. Slice into portions and serve with a lively salad! 🥗
